Charcuterie, Aix-en-Provence
Charcuterie is the branch of cooking devoted to prepared meat products, such as bacon, ham, sausage, pâtés, and is primarily from pork. This family operating in the Aix farmer’s market had the best cheeses and meats, all of which became a picnic back at my hotel. The sheep cheeses were the best!
